Jejich v\u00fdhodou je to, \u017ee mohou transportovat i l\u00e1tky nerozpustn\u00e9 ve vod\u011b, chr\u00e1n\u00ed organismus p\u0159ed n\u011bkter\u00fdmi ne\u017e\u00e1douc\u00edmi \u00fa\u010dinky l\u00e9\u010div a chr\u00e1n\u00ed k\u0159ehk\u00e9 molekuly, jako jsou nap\u0159\u00edklad nukleov\u00e9 kyseliny nebo proteiny.
